The site was four acres, almost entirely surrounded by canals and occupied by a 20,000 sq. ft. industrial building which was formerly a magazine publishing and printing company.
The project was to remodel it into a 500 seat restaurant for a Canadian company that had two successful "Gibby's" in the Montreal area.
It was planned for large parties and events as well as regular dining. It had a large cocktail lounge but no bar, following their Canadian concept. That, however, did not work well in Florida so the bar and numerous other additions and modifications were done over the years. The last one was in 1997, a major update to attract a younger upscale clientele, with black granite, Mahogany, stainless steel, white tablecloths, new chairs and all new artwork and décor.
